WARNING: Processed cheese does not contain dairy. This little fact has kept us from covering the major food groups and prevents me from stamping this diet with a "health diet" label. I know dietitians could find many other flaws, but we covered every other food group. We just didn’t get all servings in. I figured it was better than the weeks we spent over indulging and drinking beer.*

Poor Man's Apple Pie

 

1- Apple

4- packages of sugar

2- Slices of Bread

2 Tbsp of margarine

 

I learned this trick when I was a kid. Cut the apple up into small pieces taking out the core. Cook on stove with sugar margarine until apples become soft and brown. You may need to add some water to keep it from burning but be careful not to make it soupy or it won’t work. Butter the outside of both bread slices and then put the apple mixture inside. Grill like a grill cheese sandwich over medium heat. Cut in two and serve.

Breakfast

Cheese Omelet

 

2- Eggs

2 Slices- Cheese

2 Slices of toast

1- Potato

½ Package of Ramen beef seasoning

 

It is time to do a little something different with the potato. You can prep this the night before. Skin the potato and then boil until soft. Mash the potato and form into 4 small cakes. Fry cakes over medium heat in margarine. These potato cakes are always good. To prepare the omelet, place a small non-stick frying pan on the stove over medium heat. Crack two eggs and beat them in a separate bowl before putting them in to the pan. Once the eggs begin to cook flip over and place slice of cheese on the top. Let the cheese melt and cut the omelet in two to serve.

My favorite lunch... Even I get to the point that I run out of new ways to fix this favorite. Although I could add a little rice, carrots and potato...

 

Dinner

Grill Chicken Melt

 

2- Chicken leg Quarters

4- Slices of bread

3- Slice of Cheese

2- Tbsp of margarine

1-Cup Rice

 

Boil the frozen chicken leg quarters until you're able to separate the chicken from the bone. Fry the chicken in butter until golden brown. Prepare the bread in the same manor as the grilled cheese but place a layer of the browned chicken in with the cheese. Place sandwiches in medium frying pan over medium heat. Flip over when browned. Cut sandwiches in two and serve with a side of rice.
