Mac & Cheese Lunch

Chicken Roast

 

The dinner for Thursday had a bit more flavor then Wednesday. This also was a good meal if you wanted to get a little extravagant. Use candle light and put your water in wine glasses for the right mood. Serve the left over soup before the meal and use the desert at the bottom to create that extra special moment. Joanie was not fond of the "rice pudding" she wouldn’t even dignify it with the name of pudding, but I though it was pretty good.

Desert

Rice Pudding*

 

1 Cup rice

3- Packets of sugar

3- Packets of non-dairy creamer

 

Combine the non-dairy creamer with 3 tbsp of water and microwave on high until the creamer mixes with the water. Combine the "cream," sugar and rice. If mixture is runny, microwave on high until water boils out. Put mixture in in ½ cup serving dishes, chill and serve for desert.

 

 

* We did not purchase any sugar or non-dairy creamers. These supplies cost nothing and were left over from coffee we had purchased at Cup-O-Joes.

Breakfast

 

2- Eggs

2- Slices of toast

1- Slice of cheese

1- Tbsp of margarine

1- Potato

½ Package of Ramen beef seasoning

 

The breakfast sandwich was very good. Start with the potato. Cut the potato in chunks and cook them on medium high in the iron skillet. Use about 1/3 cup water and add more as needed. Season with Ramen seasoning once chunks become soft. As the potatoes are cooking, fry the egg over-hard in a separate pan. Toast the bread then butter and put ½ slice of cheese on the bread. Top with the egg and serve on a plate with the potatoes.

 

Lunch

 

1 Box of Mac and Cheese

 

This was made in true college fashion. Follow the directions on the box but replace milk with water.

 

Dinner

 

* We used the left over stew from yesterday as soup so we could have a 2-course meal

 

1- Chicken leg quarter

1½- Carrots

3- Potatoes

2- Tbsp of margarine

2- Slices of bread

 

 

Boil the frozen chicken leg quarters until you're able to separate the chicken from the bone. Chunk the carrots and potatoes. Place carrots, potatoes and chicken in 9X13 pan cover. Add the margarine and about ¾ cup of water. Cover in foil and cook in oven for 1 hour at 375. Season with salt and pepper if available...
