Chicken Stir-fry

 

 

 

Me and Joanie liked having eggs for breakfast. The problem was, we only had 12 but needed 14 to make it all 7 days. This means we had to go a day without eggs. I have found the the best substitute for not having a good breakfast is to sleep later. We employed this philosophy to it’s fullest on Sunday morning, getting up only 20 minutes before the start of the late church service.  We were late of course...

 

No good egg- when I first met Joanie, she would always refer to people as "good eggs"- that boy's a "good egg" or she's a "good egg."  I had never heard the term "good egg."  I had heard that the last one there is a "rotten egg" or "bad egg" so I would laugh at Joanie for using the term "good egg."  This worked while we lived in Watertown, New York and no one talked about "eggs".  Now that I'm here in Ohio, I've had to adjust to the fact that people are "eggs."  I still don't get it but I no longer laugh at Joanie...

Grill Cheese and "Ramon Dog"

 

4- Slices of bread

3- Slice of Cheese

2- Tbs of margarine

1- Hotdog

1- Package of Ramen soup

 

The famed Grill Cheese. The trick is to not over-grill the bread and use lots of margarine. But before we get to the instructions on the Grilled Cheese, we have to deal with the side-line player: the soup. You may want to refer to Friday for the options available for Ramen, but my suggestion is the you break the Ramen noodles and not season them fully so the broth doesn’t over power the hotdog. Slice the hotdog and add to the soup. While that is cooking you can make the grill cheese. Use a non stick frying pan over medium heat. Let this heat up while you put the 1 ½ slices of cheese between two slices of bread and butter both sides. Place this in the middle of the frying pan a flip when it become golden brown. Once the other side is golden brown you’re ready to serve. Cut the grilled cheese in half and serve with the soup. Life doesn’t get much better than that...

 

Dinner

Stir-fry

 

1- Chicken leg quarter

1- Carrots

2- Cups rice

1- Apple

2- Tbsp of margarine

2- Slices of bread

 

Boil the frozen chicken leg quarters until you're able to separate the chicken from the bone. Chunk the carrots and apples into small pieces. Grill the carrots 5 minutes ahead of time using water to soften them. Drain the water and add the apples and 1/2 tbsp of margarine. Grill until apples become brown and soft. Grill Chicken until brown in separate pan using margarine. Remove the Chicken from the pan replacing it with the rice. Heat over a medium flame adding the remaining margarine. Plate the rice and put the Chicken, Carrots and Apple on top. Serve with bread.
