I tried to make
Saturday's omelet in the microwave. This was not a good idea. Processed
cheese does not melt well in the microwave. We ate oily slimy eggs rather
then having a good omelet. The instructions on the left are on how to make
this in a pan.
Potato Chips
1 Potato
Table salt- if available
Joanie was able to secure some salt packets for free at
work. To prepare the chips, preheat oven to 400 degrees. Slice the potato
into thin slices. Sometimes cheese graters have a slicing apparatus on the
side, if not a food processor or simply use a knife. Once the potato is cut,
take a non stick pan and lay the slices out slightly overlapping each one.
Place these in the oven for 12-14 minutes.
Quick Snack
Along the lines of the potato chip, cold baked potatoes make a great
snack. Joanie made a bunch of these up and left them in the fridge along
with the apples to snack on.

Breakfast Rice Omelet
2- Eggs
¼ Cup- Cooked rice
1 Slice- Cheese
½ Hotdog
1- Potato
½ Package of Ramen beef seasoning
Cut your potato up and prepare it
how you like it in a separate pan. I took a liking to shredding
the potato, cooking it in margarine with some seasoning. To
prepare the omelet, have the rice and hotdog already cooked and
set to the side. Dice the hotdog into small pieces. Place a
small non-stick frying pan on the stove over medium heat. Crack
two eggs and beat them in a separate bowl before putting them in
to the pan. Once the eggs begin to scramble add the hotdogs and
rice. Flip this over and place a slice of cheese on the top. Let
the cheese melt and cut the omelet in two to serve.

2- Slices of bread
2- Cooked Hotdogs
1- Slice Cheese
Put this together anyway you like
and it will taste good. Grilling the bread with margarine is not
a bad idea...
Dinner
Chicken Noodle Soup
1- Chicken leg quarter
2- Carrots
1/2- Cup rice (cooked)
1- Package of Ramen Noodles
Boil the frozen chicken leg
quarters until you're able to separate the chicken from the
bone. Chunk the carrots and mix with chicken- cook in 1 quart of
water until the carrots become soft. Break apart the Ramen
noodles while it is still in the package. Bring the water to a
boil, add the Ramen and rice then remove from heat. Soup is
ready in 5 minutes. Season to taste with the Ramen seasoning.
